Can you make this with other ground meats?

I prefer to make this with beef as it has a higher fat content than chicken or turkey so it stays nice and juicy. You can swap some of the beef with another ground meat if you like.

Can you bake it in the oven instead?

If you don’t have an air fryer, you can of course use your oven to cook your meatloaf. Cook it at 350F for around 30 to 40 minutes or until cooked through.

Can you make it gluten-free?

Meatloaf does need breadcrumbs to absorb moisture and help hold everything together. You can use gluten-free breadcrumbs if you have an intolerance.

Can you make it ahead of time?

You can make the meatloaf a day or two ahead of time and keep it covered in the fridge until you are ready to cook it. Leftovers will keep well in the fridge for up to 4 days and can be reheated in the air fryer at 320F for 5 minutes to warm it back through.

Tips!

  • Don’t overwork the meatloaf mixture. Everything should be well combined, but over mixing it can cause the beef to become chewy and dense.
  • You can place the meatloaf straight into the air fryer basket. If you prefer, you can lay it on some foil.
  • I love the tomato glaze to finish off this meatloaf, but it will still be delicious without it.

When you need to serve up a hearty dinner for the family, but don’t want to spend hours in the kitchen, this is a great go to recipe.

Fantastic! 5 stars
Split into 2 loaves and cooked for 25 min.
Used soy sauce instead or Worcestershire because that’s what I had on hand
Added grateded parmesan to loaf mixture before cooking. Wonderfully moist even though I used 93/7 lean ground beef. Will definitely repeat! Thank you!Air Fryer Meatloaf Recipe - The Cookie Rookie® (26)

I am a new air fryer. I plan to make my own meatloaf recipe, nut needed an idea to time. To make this gluten free, switch to oatmeal in place of bread crumbs. I like to use a medium salsa in place of the onions, it gives a little kick to the meatloaf. I have made meatloaf in the microwave and use a doughnut shape. This would help get it cooked through.Air Fryer Meatloaf Recipe - The Cookie Rookie® (33)

It said at the beginning cooking time is 20 min. Then at the end when you started to cook it it said 15. Then mix the top glaze Then cook for 5 min more. It a play on words a little. Just have a meat Thermoneter and check the center. Altitude and size of loaf may affect it. I justcmade this had to put it back in for more cooking time.

The flavors of this were delicious! However, I was skeptical of this cooking in the middle, and unfortunately I was correct. I ended up trying to cook it an additional 10 minutes in the air fryer, and it was still raw in the middle! Eventually, I cut it all up and put it on roast in my Ninja Foodie for about 10 minutes, which finally cooked it through. bummed because I was hoping for a quick and easy dinner.Air Fryer Meatloaf Recipe - The Cookie Rookie® (40)

FAQs

Why don t you want to cook the meatloaf in the loaf pan? ›

By free-forming a meatloaf—not cooking it in a loaf pan—we get maximum surface area exposure, and therefore maximum flavor. So not only does it make it easier to slice and guard against sogginess, but mounding your meatloaf instead of panning it also makes your meatloaf literally tastier.

Why does my baked meatloaf fall apart? ›

When this happens, it's because you didn't use enough. Next time, try adding in an extra egg and/or some more breadcrumbs. Alternatively, rice, barley, corn flakes, crackers, and dried soup mix can also stand in as binding ingredients as well. Including larger quantities of these items should help solve the problem.

What degree should meatloaf be baked? ›

The oven temperature is typically set at 350 degrees F for making meatloaf. That's the temperature you want to be sure to use so the meatloaf cooks and doesn't dry out. Too high, and the outer crust will burn before the interior is cooked all the way, too low and you don't get that delicious crust.

What is the secret to keeping meatloaf moist? ›

Fat Is Your Friend

This is the reason most cooks choose ground chuck since it has this ideal proportion of fat to meat. During cooking, the fat will liquefy, making the meatloaf moist.

Why do you put milk in meatloaf? ›

Milk and other dairy products, like heavy cream and buttermilk, contain both water and fat, adding two types of moisture to our meatloaf. There's a long-held theory that milk can tenderize ground meat, and this is the reason often cited for cooking ground meat in milk to make a Bolognese-style ragù.

Is it better to bake meatloaf in a loaf pan or on a cookie sheet? ›

If you want to make the best meatloaf possible, a sheet pan is a much better medium.

What is the best binder for meatloaf? ›

If you don't have any bread, you can substitute it for breadcrumbs, crackers, cereal grains, oatmeal, instant rice, instant barley, or even potato flakes! However, bread is still the best choice of all the potential options.

Should I cook my meatloaf covered or uncovered? ›

Should I cook my meatloaf covered or uncovered? The meatloaf can be cooked uncovered. However, if you are concerned about it burning, you can cover the meatloaf with foil for the first 45 minutes and uncover it for the final 15 minutes to allow the meatloaf to brown on top.

What not to put in meatloaf? ›

5 Common Mistakes to Avoid When Making Meatloaf

  2. Not seasoning the meat enough. ...
  3. Not using cooked vegetables. ...
  4. Not soaking the bread. ...
  5. Not resting the meat.

What does adding an extra egg to meatloaf do? ›

Eggs. Sure, egg yolks add some rich flavor to a meatloaf, but the real reason we need eggs is for structure—to help bind the meatloaf together. This is especially important since we're making a free-form meatloaf, or one that you shape by hand, versus using a loaf pan.

Can you put too many breadcrumbs in meatloaf? ›

Adding more to your mixture is always easier than taking some out. Another common reason meatloaf is mushy is too much filler, like breadcrumbs, bread, and oatmeal. Too much filler will stop it from baking correctly and becoming a fully formed meatloaf.

Is it better to cook meatloaf at 350 or 400? ›

Cooking your meatloaf at 350°F creates a tender and moist result. This lower temperature allows the meat to cook gradually, preserving its natural juices and flavors.

How to tell if meatloaf is done? ›

Toward the end of the cooking time (our standard two-pound meatloaf takes about one hour), follow this simple method to know when it's done. Use an instant-read thermometer ($18, Walmart). The meat loaf's internal temperature should register 160°F when the thermometer is inserted into the center.

Should I drain the grease from my meatloaf? ›

To prevent a soggy bottom, Bangor Daily News suggests draining the grease from the loaf pan 15 minutes before your cooking time is up; this helps guarantee all sides bake to perfection.

What is the basic meatloaf formula? ›

The Basic Meatloaf Formula

All recipes for meatloaf start with the same basic formula: 2 pounds of ground meat and a “panade” made of bread or crackers soaked in milk. Along with a few eggs, this panade helps to hold the ground meat together and adds some essential moisture to the mix.

Should you cover meatloaf when baking? ›

Should I cook my meatloaf covered or uncovered? The meatloaf can be cooked uncovered. However, if you are concerned about it burning, you can cover the meatloaf with foil for the first 45 minutes and uncover it for the final 15 minutes to allow the meatloaf to brown on top.

Why does my meatloaf come out dry? ›

Beware Breadcrumbs: Overusing breadcrumbs can soak up moisture and leave your meatloaf dry. Use breadcrumbs in moderation or try using alternatives like oats or crushed crackers. Use Extra Egg: Eggs act as binders and provide moisture. Add one or two eggs per pound of meat for a moist texture.
