Maria Emmerich’s viral bread sports a nice crust with a soft, moist center. It’s bread — you know what to do. Savor it warm, straight out of the oven, or freeze, defrost, and toast to perfection. Why not top it off with cream cheese and deli turkey for a tasty higher-satiety breakfast, or smear it with butter, and you’re in keto heaven.

Making low carb simple
Instructions
Instructions are for 6 servings. Please modify as needed.
Preheat the oven to 350°F (175°C).
Mix the dry ingredients in a large bowl. Bring the water to a boil.
Add vinegar and egg whites to the dry ingredients and combine well. Add boiling water while beating with a hand mixer for about 30 seconds. Don't over-mix the dough, the consistency should resemble Play-Doh.
Moisten hands with a little olive oil and shape dough into 6 separate rolls. Place on a greased baking sheet. Top with optional sesame seeds.
Bake on a lower rack in the oven for 50-60 minutes, depending on the size of your bread rolls. They're done when you hear a hollow sound when tapping the bottom of the bun.
Serve with toppings of your choice.
Recommended special equipment
Food mixer or an electric hand mixer
How many carbs does the keto bread contain?
The keto bread contains 3 net carbs per bun (a similar bun of regular bread may contain about 20 grams of carbs). This makes it a decent option on a ketogenic diet. Expand the nutrition tab above for the full nutrition facts.
Can I substitute ingredients?
In all baking, and especially in low-carb baking, the ingredients and amounts used are important. The eggs and ground psyllium husk are hard to replace in this recipe.
If you don't like almond flour or if you have an allergy, you can make this recipe with coconut flour instead. Substitute the amount of almond flour for a third as much of coconut flour and double the number of egg whites.
Flavor your bread with your favorite seasoning to make them perfect for whatever you're serving them with. You can use garlic powder, crushed caraway seeds, or homemade bread seasoning.
Why did my keto bread turn purple?
Do your buns end up with a slightly purple color? That can happen with some brands of psyllium husk. Try a different brand.
Is keto bread gluten-free?
The keto bread is 100% gluten-free, just like all of our keto and low carb recipes.
What do you do with the leftover egg yolks?
Béarnaise sauce, of course! Check out our recipe for easy Béarnaise.
Customize your bread!
For a different look and some crunch, sprinkle seeds on the buns before you pop them into the oven –poppy seeds, sesame seeds, or why not some salt flakes and herbs?
This recipe is so versatile and can be used in a number of ways. You can easily turn it into hot dog buns, hamburger buns or garlic bread.
Why has the nutritional information changed?
The nutritional information in this recipe was based on a high-fiber almond flour that we realized was difficult to purchase in some areas of the world. We decided to update it with a more common almond flour that is slightly higher in carbs. That’s why the carb amount in the video does not match the nutritional information in the recipe.
We have also removed the butter from the ingredients list as it was not part of the bread but a topping. This is still a very low carb recipe, and you will most likely eat it with butter or another high fat spread. Therefore, it will still be a keto meal, which is why we've kept the name.

Please can I have a copy of the older recipe? I have been making this for years and love it. I agree with a few of the comments that this adjusted recipe came out very soupy. Even after adding an extra 1/4 cup of almond flour and a few more teaspoons of psyllium husk fiber to thicken it, it still didn’t have the same texture as the original recipe. Thanks!

Measurements are wrong. In grams it should be 40 gram for the psylium husk powder. 50 is way too much because the bread becomes a rubber sponge.
I won't be naking these. I will make the with cream cheese, eggs, psylium husk powder, baking powder and Greek yoghurt. Way easier and better to eat. Sorry...2757

Hi, Helena! Air pockets or hollow rolls usually indicate overmixing the batter.

Hi, Sara! That's a fairly common issue with certain brands of psyllium. It doesn't affect the taste at all, but if it bothers you, you can always try a different brand!

Hi! Just a thought: I've made this recipe three times and it's been perfect every time. I add the water just a little at a time and mix it by hand with a wooden spoon - not a beater. When I know the consistency is perfect I stop adding water. Hope that helps 😁

We have not tested this specific recipe with prepared egg whites. For some reason, with other recipes, the results seem to be mixed when using prepared egg whites. I am not sure of the reason for that though.

There can still be variation in how purple the bread can be depending on the specific batch. If you can find a "blonde" psyllium husk, that seems to lessen the chances of the rolls turning purple. I use Now brand and have not any issues.

We have not tested these with flax instead of psyllium. In general, other substitutes for the psyllium have not worked out well.

The recipe definitely has changed! Kerry you are correct - How does the recipe team not know this?! The old recipe certainly makes a nicer roll. Almond flour, psyllium and water different amounts.
Old recipe had
150g almond flour
40g psyllium husk powder
225ml boiling water
Why did it get changed I wonder - these quantities above work a lot better - I have had the old recipe printed and is
My go to every time. Tried the new one and just not the same. Please can I have a copy of the older recipe? I have been making this for years and love it. Diet doctor keto bread rolls is by far THE best bread I've tried so far and I've tried a lot. Easy to make and not one you have to heat for it to be edible. When I make it again I will either use less salt or try it with no salt.......a little salty for me but the texture is amazing . I would give it 15 out of 10.

You can try adding a little more liquid, or cut the baking time by about 5 minutes or so.

This is tasty and has a consistency similar to a wheat roll. We liked it and it was an easy recipe. However, I advise people to first try it when they aren't going out in public the next day. One roll made me a little flatulent. The day I ate 3 (big mistake!) it was much worse. I assume it's the psylium husk powder so I'm going to try cutting that back slightly and split the recipe into 8 parts instead of 6.

The first batch I made were perfect. The second and subsequent batches were also hollow. In my case it was the baking power. I put in a little more thinking it would rise better but it has the opposite effect. Stick to the exact quantities and all will be well. Enjoy.2793

Leisha, I’m no expert but using wheat flour will add carbs, and the point of this is that it is low carb: “The keto bread contains 3 net carbs per bun (a similar bun of regular bread may contain about 20 grams of carbs). This makes it a decent option on a ketogenic diet.” To make bread rolls with wheat flour you should search for a bread-making recipe!
