A few of our favorite, fresh, delicious recipes to get you in the spirit of spring, no matter what the weather's like!
Spring. It's a fresh, new start, isn't it?
For me, it'snot just outdoors that a transformation occurs. It seems that I get a new mindset each year about this time, even in the kitchen! I love that, with the change of seasons, comes a change in my style of cooking.
During these lovely springdays, I'm all about fresh, simple, light and lean. Comfort foods have lost their charm, and now I'mquite enchantedwith the beautiful produce that's beginningto arrive at local markets. I've pulled out my warm weather wardrobe, and I'mhoping things will soon be fitting a bit looser.
Today, I thought I'd share Five Fresh, Delicious Spring Recipes, a little collectionof some of our best seasonalrecipes, to bring a bit of this lovely time of yearto your kitchen too! They're all healthy and feature the amazing seasonal ingredients that are beginning to show up in my local grocery stores. Well... there's one exception, butlife is a bit boring without a splurge here and there, right? So I'm including one of our favorite springtime desserts along with the good stuff.

My daughter made this amazing Provencal Roasted Chicken Saladlast year when we were visiting her in London. I call it "Provencal" because she got the recipe while visiting a friend in Provence. It's such a unique and delicious combination of colors, textures and ingredients. I love how wonderful recipes are passed on and on and on...
This is the perfect side for any spring occasion. It's fresh, delicious and make-ahead. The asparagus islightly steamed (this can be done early in the day).Panko crumbs (Japanese bread crumbs)aretossed with melted butter, finely shredded lemon zest and chopped parsley. This crisp buttery garnish can also be done several hours in advance. Not much is left for the last minute, except for warming and and putting it all together for a pretty presentation. It seems that everyone loves this Asparagus with Lemon Parsley Panko(especially the stress-freehostess!).
These Goat Cheese and Tomato Soufflé Tarts are beautiful ANDsuper delicious! There's an ingenious press-in crust that is flaky, tender and EASY! On top of that,these little beauties can be made ahead- which makes them perfect for a spring brunch, lunch or casual dinner.
Although I created this Arugula Chicken Salad when the cold winds were still blowing, it was in anticipation of this time of year. It's a delightful, spring-inspired salad with lean chicken, strawberries, mango and edamame. It's fresh, light and super delicious with the flavorful Honey Lime dressing tying it all together.
Last, but not least, this French Grandmother's Lemon Yogurt Cake is an all time favorite and has such a fun history. When I found the recipe, I couldn't help but try it. It's a simple, easy, delicious cake that can be whipped up at the last minute, and it's definitelybecome an "old standby"here at The Café. I love that it's not too sweet and a small slice isn't over the top in fat and calories.

It's so funny Liz. One day we'll have weather in the 70's and low 80's and the next night, the temps will drop to 32 degrees! I think tonight's the last of that though. Good bye winter!
