If you’ve been following me here for any length of time, you might find this post here a little odd. You might be thinking to yourself, “but, um — Ashley doesn’t do pie.”

And it’s true, in a sense. I am not a pie fanatic like a lot of people are.

It’s not that I dislike pie, it’s just that I would probably take a cookie, brownie, piece of cake, bowl of ice cream, or slab of cheesecake before I would go for the pie.

There’s one exception though (okay, two — this Banana Cream Pie is right up there): Chocolate Pie.

Because I know you know how much I love my chocolate. I mean, I haven’t exactly tried to hide it. (Though I do try to balance my obsession out with healthy meals like this Skillet Lasagna and this Oven Fried Chicken).

And not that we need a reason to celebrate with chocolate (it is Monday), but you should know that August is Chocolate Heritage Month in Saint Lucia! Have you ever heard a more beautiful thing?

I’m not sure that anyone ever needed an excuse to want to visit Saint Lucia (it is definitely on my bucket list!), but if you do, a month-long celebration of chocolate would do it for me.

Many of the island’s resorts offer unique and delicious experiences to celebrate, including chocolate welcome packages, spa treatments, co*cktails, chocolate tastings and even the opportunity to harvest, ferment, dry, roast and create your own chocolate truffles — it is bound to be an incredible adventure! And definitely one I hope I get to participate in someday.

So since I’m unable to celebrate Chocolate Heritage Month in Saint Lucia with a warm chocolate oil massage with beach views, I am consoling myself with chocolate pie!

When I was planning this recipe, I really wanted to use eggs for that rich, creamy texture but I didn’t want the extra step of tempering them. Basically, I wanted all of that homemade chocolate pudding flavor without any of the work.

And I won.

I decided to stir everything together before cooking, and strain it afterward and it worked better than I ever could have thought! I had my hopes up, but I just wasn’t sure if I was going to succeed. I’m happy to say that this chocolate pie is impressive enough to serve at your holiday gatherings this fall and winter, but without a lot of the stress that homemade chocolate pie or pudding can bring.

It’s easy, quick, and so rich and chocolatey, thanks to Saint Lucian chocolate!

Ingredients

  • 1 pie crust baked according to package directions and cooled (or make your own from scratch!)
  • 1/2 cup sugar
  • 2 tablespoons unsweetened cocoa powder
  • 3 tablespoons corn starch
  • 2 eggs
  • 2 1/2 cups milk
  • 1 cup chopped dark chocolate
  • 1 cup heavy cream
  • 1 teaspoon vanilla
  • 1/2 cup powdered icing sugar

Instructions

  • In a large skillet, combine sugar, cocoa powder and corn starch and whisk until smooth.

  • Add eggs and milk and whisk until smooth.

  • Cook over medium heat, whisking often, until it comes to a simmer.

  • Continue cooking over medium heat, whisking constantly, until thickened (should coat the back of a spoon and will look like thin pudding).

  • Remove from the heat, stir in chopped chocolate and stir until melted.

  • Pour through a fine mesh sieve into prepared pie crust and smooth with a spatula. Place a piece of wax paper over top and press onto the surface of the pudding to prevent a film from forming while it cools.

  • Refrigerate until set, about 4 hours or overnight.

  • Whip cream with an electric mixer until soft peaks form. Add vanilla and icing sugar and beat on high until stiff peaks form. Spread over pie once set. Garnish with chocolate shavings if desired.
